  1. Preheat the Oven: Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare the Brussels Sprouts: Toss the Brussels sprouts with olive oil, salt, and pepper in a large mixing bowl until evenly coated.
  3. Roast the Brussels Sprouts: Spread the Brussels sprouts in a single layer on the prepared baking sheet. Roast for 20-25 minutes, tossing halfway through, until they are crispy and browned on the edges.
  4. Make the Balsamic Glaze: While the Brussels sprouts are roasting, heat the balsamic vinegar and honey (if using) in a small saucepan over medium heat. Simmer for 5-7 minutes, stirring occasionally, until the mixture reduces by half and thickens into a glaze.
  5. Drizzle and Serve: Once the Brussels sprouts are done, remove them from the oven and drizzle with the balsamic glaze. Toss to coat evenly. Garnish with fresh parsley if desired and serve immediately.
